Flintstone steak
We ordered 30lbs of assorted roasts and steaks from an organic farmer. I opened the package on this round steak to find the biggest Flintstone-looking piece of meat I’d ever seen. Luckily, my sister is dating a chef/restaurateur who is (conveniently for me) also a trained butcher.
I came to learn that this is actually the whole round, made up of the top, bottom and eye of round. He offered some suggestions on how to cook each part as well, which is great because I have to cook it all today and we don’t even have a party planned.
Anyone want to come over for dinner?
